About Us

Yossi’s grandfather, Samson, one of the falafel pioneers, started his business selling falafel from a trolley across the streets of Old Jerusalem. Over the years, a shop was opened and this is where Yossi spent most of his summer holidays helping his grandfather. This is where he learnt the art of making falafel. Watching his grandfather press his hands into the falafel mix taught Yossi that sense of touch is the most important part of getting the perfect result: crispiness on the outside and fluffiness on the inside. Yossi believes that falafel must be made with passion and love or not at all!
